סלט פטריות עם פסטרמה..



זהו אחד המתכונים האהובים עלי בזמן האחרון, אני משתדל להכין ממנו כמה שאני יכול :)
אהבתי לפטריות שונות עצומה וכך גם לבשר, נקניקים על גווניהם.
במקור, אני מכין את הסלט הזה עם פרושטו, או ספאק (שזה בעצם פרשוטו שהוחמץ עם ערער..)
אך הפעם לטובת אלו שלא אוכלים מוצרי "לבן" החלטתי טיפה לשנות ולהכניס פנימה פסטרמה טובה..
אפשר להשתמש ברוסטביף, קורנדביף או כל פרוסת נקניק משובחת - שכיף לכם לאכול ממנה.
אתם יכולים לבחור לעצמכם איזה פסטרמה שבא לכם, אבל אלו עם הטעמים העזים יהיו מוצלחים יותר.
אני בחרתי פה בבשר בקר כבוש (קורנדביף) עם קרסט (ציפוי) מתובל. אני רוכש אותה במעדניה ליד הבית, שהם מכינים שם לבד. כך אני בטוח שזה לא בשר מעובד. אני מעדיף לקבל פסטרמה מבשר איכותי ובהכנה איכותית גם כן.

לגבי הפטריות, פשוט תשתוללו. אני במתכון זה בחרתי בארבעה סוגים שונים.. אתם יכולים להחליט לעצמכם
איזו תערובת מתאימה לכם, לחיך ולכיס.

אז בואו נתחיל..

מצרכים: (2-4 מנות.. )
1 סלסלת פטריות שמפיניות טריות
1 סלסלת פטריות פורטבלו גדולות, חתוכות לרצועות עבות
1 סלסלת פטריות מלך, פרוסות לאורך
1 סלסלת פטריות יער, מופרדות בגסות
3 כפות שמן זית
8 רצועות פסטרמה איכותית
1 כף חמאה רכה (לשומרי הכשרות, ניתן להוריד אותה, ולהוסיף במקומה עוד כף שמן זית)
שפיץ מפלפל אדום חריף פרוס דק
2 שיני שום קצוצות
מלח ופלפל לפי הטעם
1/3 כוס ציר עוף (או מים)
עלי אוגנו טריים או פטרוזיליה לקישוט ולטעם.

הכנה:
1 - מחממים מעט את שמן הזית במחבת גדולה מאד, ומטגנים קלות את השום ואת הפלפל החריף.
2 - מוסיפים את כל הפטריות ומקפיצים מידי פעם כדי שהשמן והנוזלים של הפטריות יתמזגו. ממשיכים לטגן עד שהפטריות מאבדות את הנוזלים שלהן ונהיות קצת יותר רכות.
3 - מוסיפים את הציר ומצמצמים כמעט לשליש נוזלים.
4 - מוסיפים את רצועות הפסטרמה ומקפיצים אותם יחד עם הפטריות ל 20 שניות. מפזרים את הירק לקישוט ומכבים את האש.

Mushroom Salad with pastrami...


This is one of my favorite recent recipes that I adore and I try to make as much as I can from it J
My love for different mushroom is enormous and so as for the meat, a variety of sausages.
Originally, I make this salad with prosciutto or Spec {basically a prosciutto that was soured with juniper...}.
But this time, for those of you who don't eat ham I've decided to change it a bit and put in good pastrami. You can use roast beef, corned beef or any other fine piece of sausage – one who’s fun to eat from.
You can choose your own pastrami you like, but those who have the strongest flavors will be better to choose from.
I picked corned beef with spicy crust. I purchase it in a deli near my house, they make it there, and thus I'm sure it is not a process meat. I rather get a fine meat pastrami which was quality made as well.

According to the mushrooms, just go wild. I used 4 different kinds in this recipe. You can decide which blend suits you the most, to your palate and pocket.

So let's get started:

Ingredients: {2-4 dishes}
1 fresh champignon mushrooms basket
1 big Portobello mushrooms basket, large stripes cut
1 King mushrooms basket, length cut
1 Forest mushrooms, coarse separated
3 tablespoons Olive Oil
8 fine Pastrami pieces
1 tablespoon of soft butter {for kosher, you may use another tablespoons of Olive Oil instead}
1 Tip of hot red Pepper, thin cut
2 chopped garlic cloves
Salt and Pepper
1/3 glass of chicken broth {or water}
Fresh Oregano leaves or parsley for decoration and taste

Cooking:

  1. Heat the Olive Oil a bit in a very large pan, and lightly fry the garlic and the hot pepper.
  2. Add all the mushroom types and toss them occasionally so the oil and the fluids of the mushrooms merge. Keep on frying until the mushrooms loose their fluids and become a bit softer.
  3. Add the broth and reduce to almost 1/3 of the fluids.
  4. Add the Pastrami's pieces and toss them along with the mushrooms for 20 seconds. Spread the vegetable for decoration and turn off the stove.
