קציצות בשר עם נענע, מטוגנות..

קציצות, מאכל שאין מישהו שלא מכיר. עגולות, או מאורכות..
מוצקות, או אווריריות. שרופות, או זהובות ומושלמות..
אין אמא שלא עשתה אלפי פעמים את הקציצות "שלה"..
יש כאלו מדהימות ויש כאלו שחבל על הבשר..
חלקן שוחות ברוטב אדום וחלקן מטוגנות ונערמות בקערה.

אני מאד אוהב קציצות.
עיגולים נימוחים, של בשר מצויין ושמנוני. מתובלן בעדינות ומטוגן בשמן חמים.
לפעמים גם אני, מלווה אותם ברוטב סמיך של עגבניות, או נענע ולימון למשל (בקרוב...).
אך אחת הדרכים האהובות עלי לאכול קציצות, היא הדרך הפשוטה.. כמו שהן.
איך שהן יוצאות מהשמן הרותח, אין דבר טוב מזה.. (טוב אולי רק שניצל.. )..יחד עם סלט ירוק, ופירה חמאתי..
נו.. כבר נוזל לי הריר.. אני הולך להכין..

מצרכים: (4-6 מנות)
שמן צמחי
350 גר' בשר עגל מנתח צוואר, טחון
350 גר' בשר טלה מנתח צלעות\חזה, טחון
1 כוס, נענע טריה קצוצה
1/2 כוס, פטרוזיליה טרייה קצוצה
1 פרוסה עבה מאד של לחם\חלה, מושרת במים, סחוטה וקצוצה
1 ביצה גדולה
1/2 כפית מלח שולחן
1/2 כפית פלפל שחור גרוס
2 שיני שום כתושות
1/4 כפית אבקת סודה לשתייה (לא יותר מרבע כפית!!!)
פירורי לחם לציפוי

הכנה:
1 - בקערה גדולה נערבב יחד את כל המצרכים ביד, פרט לשמן. הערבוב צריך להביא את המצרכים, להיות עיסה הומוגנית
וחלקה. (נסו לא לערבב יותר מידי, רק כמה שצריך). כסו בניילון נצמד והכניסו למקרר לשעה בערך.
2 - חממו שמן בגובה חצי ס"מ, במחבת רחבה. צרו עיגולים (בגודל של כדורי פינג פונג) בעזרת הידיים וגלגלו
בפירורי לחם רגילים.
3 - טגנו את הקציצות בשמן, על חום בינוני עד להזהבה. הפכו לצד השני וטגנו לדקה נוספת, הוציאו את הקציצות לקערה
עם נייר סופג.

"Fried Meatballs with Mint"
Meatballs are a dish that everyone knows. Round ones, or starch ones.
Firm, or airy ones. Burn or perfect golden ones.
There isn’t one mother who hasn’t done "her" meatballs, thousands of times…
There are some that are heavenly and there are some that I feel sorry for the meat.
There are some who swims in red gravy and some are fried and stocked in a bawl.
I love meatballs very much. Soft round shapes of fine greasy spiced meat gently fried in hot oil.
Sometimes I also accompany them with a thick tomatoes sauce or lemon and mint {soon…} for instance. But, my favorite ways to eat meatballs is the simple way...
as they are. As they come out from the boiled oil, there is nothing second to that. along with a green salad and buttery mash potatoes, God… I'm drooling, I'm going to make some now…
Ingredients: {4-6 dishes}
Vegetable Oil
350gr grounded Neck cut Veal meat
350gr grounded breast/ribs cut Veal meat
1 glass of chop fresh Mint
1/2 glass of chop fresh Parsley
1 very thick water soaked and squeezed piece of Bread
1 large Egg
1/2 teaspoon of Salt
1/2 teaspoon of grinded Black Pepper
2 crushed Garlic Cloves
1/4 teaspoon of drinking Soda Powder {not more than 1/4!!!}
Bread Crumbs for the frosting or just some flower.
Cooking:
  1. In a large bawl - mix all the ingredients together by hand except the Oil. The mixing should give us homogeneous smooth "dough" {try not to over mix it}. Cover it with starch nylon and put in the refrigerator for about 1 hour.
  2. In a wide pan, heat the Oil {1/2cm height}. Make round shape {Ping Pong} balls by hand and roll them in the Bread Crumbs.
  3. Fry the balls in the Oil on a medium fire until they become golden. Flip them to the other side and fry for another minute. Pull them out to a paper towel.
