פסטה ברוטב אניסט, פרגית ועגבניות לחות


פסטות עם בשר תמיד מעניינות אותי הרבה יותר, מאשר פסטה ברטבים אחרים.
כמה אפשר לאכול פסטה ברוטב פטריות?. בבלוג כפי שאתם רואים, יש לא מעט אוכל איטלקי,
ורב הפסטות המפורסמות כאן, משלבות בשר, או פרות ים.

זהו מתכון מיוחד מאד, שמשלב, גם בשר פרגית רך וטעים וגם רוטב שמבוסס על טעמי אניס, עגבניות
ועשבי תיבול. במקרה זה בזיליקום, אך בקלות אפשר להכין גם עם טימין למשל, או פטרוזיליה לחלופין.
העגבניות משמשות כאן כמרכיב נוסף ולא ממש כבסיס רוטב אדום סטנדרטי..

אני מודע לכך שלא כולם אוהבים טעמי אניס, אך אלו שכן מתחברים לטעם המיוחד הזה, יאהבו
את המתכון הנ"ל מאד. הייחוד בטעמו, הוא הפתעה לכל אחד שיטעם.

מצרכים: (4 מנות)
1 חבילת פסטה ארוכה ועדינה.
2-3 סטייק פרגית, חתוכים לקוביות קטנות (בערך ביס)
10 עגבניות שרי (עדיף תמר), חתוכות לרבעים
6-7 עלי בזיליקום, חתוכים שיפונד.
4 עגבניות לחות בשמן זית (ניתן לרכוש במעדניות מתמחות), חתוכות לרצועות
50 גר חמאה
1 כף שמן זית
2 שיני שום כתושות
1 בצלצל שאלוט קצוץ דק
1/3 כוס ערק\סמבוקה\אוזו ודומיהם (העיקר שיהיה אלכוהול לבן, עם טעם אניס)
כף פרמזן מוגררת
מלח לפי הטעם
פלפל לפי הטעם
1/ כפית שבבי צ'ילי יבשים (לא חייב.. רק למי שבא לתבל טיפה בחריפות את המנה)

להכנה:
1 - במחבת גדולה ועמוקה (או בסיר רחב) ממיסים 25 גר' חמאה עם כף שמן. מטגנים את בצלצל השאלוט
והשום עד לשקיפות בלהבה בינונית. מוסיפים את הפרגית ומערבבים הכל ל 2 דק'.
2 - מוסיפים את רבעי העגבניות, הבזיליקום ומתבלים במלח, צי'לי ובפלפל לפי הטעם.
3 - מעלים את האש לדרגה הגבוהה ביותר, מוזגים את הערק (או האלכוהול שבחרתם) ומערבבים במהירות
עד שאלכוהול מתאדה כולו ומה שנשאר הוא ניחוח האניס. מכבים את האש.
4 - בינתיים מרתיחים סיר עם המון מים וכף מלח.. ומבשלים את הפסטה לפי הוראות הייצרן.
דקה לפני שהפסטה מוכנה, מדליקים את האש מתחת למחבת הרוטב בשנית, מוסיפים את החמאה הנותרת
ואת העגבניות הלחות.
5 - מסננים את הפסטה המוכנה מהמים ומוסיפים אותה למחבת הגדולה. מערבבים היטב ומבשלים הכל לדקה נוספת.

מגישים חם, עם פרמזן מגורד מלמעלה.

Aniseed Pasta

Meat Pasta is far more interesting me than other kinds of pastas. How much can you eat the same Mushrooms Pasta? In this blog, as you can see, there are quite a few Italian dishes, and most of the pastas in here have meat or seafood in them.

This is a very special recipe which entwines delicious, soft pullet and has Aniseed flavors sauce, tomatoes and spicing herbs. In this case, Basil, but you can easily change it to Thyme or Parsley. The tomatoes use here as a second component and not really the base for the standard red sauce…

I'm well aware that not all of you like Aniseed flavors, but those of you who relate to this special taste, will like this recipe a lot. Its unique flavor is a surprise to anyone who tastes it.

Ingredients: {4 dishes}

1 pack of long delicate Pasta

2-3 small cubes cut Pullet Steaks

10 quarters cut Cherry Tomatoes {Tamar}

6-7 cuts Basil leaves

4 stripes cut Olive Oil moist Tomatoes {you can purchase in mastering stores}

50gr' Butter

1 tablespoon Olive Oil

2 crashed Garlic Cloves

1 small chop Shallot Onion

1/3 glass Arak / Sambuca / Uzo {the point is to be white alcohol with Aniseed flavor}

1 tablespoon of Grated Parmesan

Salt

Black Pepper

1 teaspoon of dry Chilly Sprinkles {not mandatory, only for those who wants spiciness in their dish}

Cooking:

  1. In a large wide pan {or wide pot} we melt 25gr of the Butter with 1 tablespoon of Olive Oil. Fry the Shallot Onion and the Garlic on a medium fire stove. Add the Pullet and mix it all together for 2 minutes.
  2. Add the Quarters Tomatoes, Basil and spice it with Salt, Pepper and Chilly by taste.
  3. turn up the fire stove to the highest possible, pour the Arak {or any alcohol you chose} and mix rapidly until the alcohol evaporate entirely and only the Aniseed scent is what's left. Turn off the stove fire.
  4. In the meanwhile, we boil a pot filled with Water and 1 tablespoon of Salt; cook the Pasta according to manufacture prescriptions. A minute before the Pasta is ready, turn on the fire stove beneath the gravy pan again, add the remains Butter and the Moist Tomatoes.
  5. Filter the Pasta from the water and add it to the large pan. Mix it all together and cook for 1 minute.

Serve it hot with grated Parmesan on top.

  1. יאמי, נראה ממש טעים רק אני תוהה לגבי רכיב האניס..מזג האויר בישראל ביולי-אוגוסט מזמין צריכת אניס לסוגיו כי זה צמח מאד מרענן אבל זה לא מוזר בפסטה? בכל מקרה, המתכון נראה די פשוט אז אנסה אותו ונראה.
