רצועות בקר ברוטב צדפות


מאכלים אסייתים מגיעים בכל הצבעים והמינים. בדרך כלל עוטף את הירקות או הבשר רוטב סמיך בשלל טעמים.
חמוץ, חריף, מתוק ואפילו מר מידי פעם. לפעמים, אנו נוכל גם להרגיש כמה טעמים יחד..
תוספת מסורתית, מהמטבח האסייתי נוכל למצוא תמיד את האורז כמובן ואת האטריות ששם מקורם.
במזרח אסיה סוגי האטריות הקיימות יכולות לבלבל כל בן אדם. הם עשויות מביצים, חיטה, שעועית, אורז ומה לא..
לכל אחת טעם שונה, מרקם שונה ומידות שונות. שמנות או דקות, שקופות או צהובות, ארוכות מאד או קצרות יותר, בקיצור
מגוון מטורף. אנסה מידי פעם לגוון מהאטרייה הנפוצה שאוכלים בדרך כלל במסעדות (אטריות ביצים) כדי לגוון לכם גם כן.

מתכון זה, חביב עלי ביותר, הוא דורש רוטב מסוים שניתן לרכוש במכולות ובשווקים המתמחים ("מזרח ומערב", טיב טעם או כל מקום שמחזיק מצרכים ייעודיים למטבח האסייתי) אך סה"כ הוא קל מאד להכנה ומהיר מאד, כמו בדרך כלל במטבח זה.

מצרכים: (4 מנות)
2 כפות שמן צמחי
300 גר' שייטל, או סינטה ללא שומן. חתוך לרצועות דקות ובאורך של 2-3 ס"מ
1 פלפל אדום חתוך לקוביות (2X2)
1 פלפל ירוק כהה, חתוך לקוביות (2X2)
1 בצל לבן קלוף חתוך לקוביות (2X2)
3 פטריות חורש גדולות, פרוסות
שפיץ של פלפל צ'ילי אדום טרי, חתוך לטבעות
2 סמ' שורש ג'ינג'ר חתוך לגפרורים (ג'וליאנים)
2 כפיות סויה בהירה
1 כפית סויה שחורה
1 כפית מירין, או חומץ אורז
2 כפות רוטב צדפות (ניתן לרכוש במרכולים הייעודיים)
2 כפות מים
1 כפית גדושה סוכר חום
4 "עלומות" של אטריות חיטה ("סומה"), ניתן להכין עם כל אטרייה אחרת שבא לכם לחלופין.
5 גבעולי כוסברה קצוצים לקישוט

להכנה:
1- בסיר גדול ועמוק, הרתיחו 4 ליטר מים ובשלו את האטריות ל 3 דק' בדיוק, סננו ושימרו בצד.
2- במחבת ווק גדולה, חממו כף שמן, הוסיפו כפית סויה בהירה וטגנו את הבשר עד שהוא משנה את צבעו ונאטם יחד עם הצ'ילי.
הוציאו לקערה ושימרו בצד.
3- באותה המחבת חממו את כף השמן הנותרת והקפיצו פנימה את כל הירקות והג'ינג'ר לדקה וחצי. הכניסו פנימה את הבשר
והצ'ילי בהמתינו בצד כולל הנוזלים שהבשר הגיר לקערה וערבבו היטב.
4- הוסיפו את הרטבים, הסויה הכהה, המירין, רוטב הצדפות, המים והסוכר. ערבבו היטב שהירקות והבשר יקבלו ויספגו את הרוטב. אם העיסה סמיכה מידי, אפשר להוסיף טיפה מים ולהמשיך לבשל ל 10 שניות נוספות.

כל הבישול בווק אמור לקחת לא יותר מ 6-7 דק' מקסימום.

הגישו בקערה עמוקה גבעה של אטריות וכף גדולה של הבשר והירקות מהווק. פזרו קצת כוסברה מעל לארומה וטעם.

Beef Stripes in Clamp Sauce
Asian dishes come in all shapes and colors. The vegetables or meat are usually covered in thick sauce in a variety of flavors, sour, hot, sweet and even bitter. Sometimes, we can even feel them together. A traditional adding from the Asian cuisine we can always find the rice and noodles. In eastern Asia the variety of noodles can confuse any man. They are made from eggs, wheat, beans, rice etc.
Each has a different taste; their size and texture are different also. Fat or thin, transparent or yellow, very long or very short, in a nutshell, the variety is insane. I will try to diversify from the common noodle we usually eat in the restaurants {egg noodles} to diversify for you as well.
I like this recipe very much; it requires a certain sauce's you can purchase in the mastering markets {"east and west", "Tiv Taam" or any other place which holds Asian cuisine ingredients} but it is pretty easy and very fast to cook such as many of the dishes from this cuisine.
Ingredients: {4 dishes}
2 tablespoon Vegetable Oil
300gr. Cut to thin stripe 2-3cm long Whitelaw or Sirlion, fat free.
1 cube diced Red Pepper
1 cube diced Dark Green Pepper
3 large spread wild mushrooms
1 ring cut top of fresh Red Chilly Pepper
2 cm of "julienne" cut Ginger Root
2 tablespoons of Light Soy
1 teaspoon of Black Soy
1 teaspoon of Mirin or Rice Vinegar
2 tablespoons of Clamps sauce {you can purchase in markets}
2 tablespoons of Water
1 heavy tablespoon of Brown Sugar
4 packs of Wheat Noodles, you can cook with any other noodles as well
5 chops coriander Stalks for decoration

Cooking:
  1. In a large deep pot, boil 4 liter of Water and cook the Noodles for exact 3 minutes. Filter it and put aside.
  2. In a large Wok pan, heat 1 tablespoon of Oil, add a teaspoon of Light Soy and fry the meat till it changes its color and sealed along with the Chilly. Pullout to a bawl and put aside.
  3. In the same pan, heat the other tablespoon Oil and through in all the vegetables and Ginger for 1.30 minutes. Add in the Meat and Chilly along with the Meat fluids from the bawl and mix well.
  4. Add the sauces, Dark Soy, Mirin, Clamp sauce, Water and Sugar. Mix it well so the vegetables and Meat will absorb the sauce. If the paste is too thick you can always add some water and keep cooking for another 10 seconds.
The entire cooking should take 6-7 minutes tops.
Serve in a deep bawl a "hill" of noodles and a large spoon of the meat and vegetables from the Wok; spread some Coriander on top for flavor and aroma.

    וחשבתי לשים גם ברוקולי, יש מתכון מפורסם של בקר וברוקולי ברוטב צדפות לא..?

    ברוקולי אמור להיות פריך יותר ועם פחות רטבים סביבו לטעמי. יכול להיות שיהיה מוצלח.

  5. מה יותר יתאים אטריות ביצים פשוטות או אטריות אורז דקות (שערות סבתא כאלה)?

  6. במתכון פה השתמשתי באטריות "סומה" שאלו אירטיות חיטה חלקות ורכות.. אני מניח שאירטיות ביצים יעשו את העבודה גם טוב, כמו כן גם "שיערות סבתא" :) (אורז)
    אך הייתי מעדיף במתכון זה איטריות עם קצת יותר "בשר" עבות או שטוחות. זה עניין של טעם...
