קבב גלילי על חציל שרוף ועגבניות ורודות


לקבבים צורות, מרקמים וטעמים שונים, מכל מדינה כמעט מגיעה הקציצה הצלוייה הזו עם טעמים ותיבולים
שונים ומשונים. הקבב הרומני המפורסם כמובן, הבולגרי והמזרחי הם הנפוצים ביותר שאנו מכירים.
אך יש ואריאציות על אלו ודמיונם של הטבחים והמגלגלים יכול תמיד לשנות ולעצב מחדש את ה"קבב".

זהו מתכון טעים במיוחד שמשלב שוב את השילוש הקדוש מבחינתי.
בשר, חציל ועגבניות.. אך במקום תבשיל שמבושל יחד ברוטב, אנו נכין כל אחד בנפרד, שאת הפגישה בינהם
נייצר על הצלחת ובפה.

בגדול, אנו מכינים את המנה ב 3 שלבים קצרים יחסית ודי קלים.

מצרכים: (4 מנות בערך)
קבב -
500 גר' בשר טחון פעמיים, מנתח צוואר
150 גר' שומן טלה טחון פעמיים
1/2 כוס פטרוזיליה קצוצה
1 בצל סגול קצוץ דק מאד
2 שיני שום כתושות
1/2 פלפל ירוק חריף ללא גרעינים קצוץ דק מאד
חצי כפית מלח
חצי כפית פלפל שחור גרוס
3 כפות מי סודה (לא אבקה!)

חציל:
1 חציל בלאדי גדול
שמן זית
חצי לימון סחוט
10 עלי אורגנו טריים קצוצים
מלח גס
2 שיני שום כתושות

עגבניות:
3-4 עגבניות בשלות ובשרניות (אני מעדיף תמר)
2 כפות טחינה גולמית מסוג "קארוואן", "נשר", "ארז" וכדומה.. (הכוונה לטחינה איכותית מאד עם טעם שמזכיר חלווה)
קורט מלח
מעט מיץ לימון

הכנה:
1 - קולים חציל על אש פתוחה עד שהוא נשרף לגמרי. מקלפים, מסננים מנוזלים, חותכים לקוביות גסות
מתבלים במיץ לימון, בשום,שמן זית, מלח ובארוגנו. מכסים בניילון נצמד ומניחים בצד לספיגת טעמים.
2 - בקערה עמוקה, מערבבים יחד את הבשר והשומן, מתבלים בפטרוזיליה, מלח ופלפל.
במחבת קטנה, מחממים 1 כף שמן זית ומאדים ל חצי דקה בדיוק את הבצל, השום והפלפל החריף.
מוסיפים את התערובת לבשר המתובל. שופכים פנימה את הסודה ולשים את הכל יחד למשך 2 דק'.
יוצרים "קבבים" בינוניים בין כפות הידיים וצולים על גריל פחמים, או על מחבת פסים חמה עם טיפה שמן זית.
3 - בינתיים מעבדים את העגבניות בבלנדר, או במעבד מזון עד למשחה חלקה (לחילופין אפשר לקצוץ אותן דק מאד)
מוסיפים את הטחינה ומתבלים במעט מלח ומיץ לימון.
4 - מצלחתים: במרכז הצלחת עורמים מהחצילים, מניחים 4 קבבים ויוצקים 3 כפות של עגבניה מסביב.
מזליפים שמן זית איכותי ומפזרים טיפה מלח גס.
מגישים עם פיתות חמות.. וסלט ירוק

Kebab, Eggplant and pink tomatoes
Kebabs have different shapes, textures and taste. Almost from each country, this roast meatball comes with different strange spices and flavors. The famous Romanian Kebab of course, along with the Bulgarian and the eastern one are the most common among the kebabs we know. But there are variations from the imagination of the cook who can design and reshape the kebab as he see fit.
This is a very tasty recipe which combines the holly three, in my point of view; meat, Eggplant and Tomatoes. But, instead of a stew which is cooked together in gravy, we will make each as individual, where we meet them together over our plate in our mouth at the end.
We make this dish in 3 relatively easy and short phases.
Ingredients: {about 4 dishes}
Kebab:
500gr of Neck cut mincemeat {mince twice}
150gr Lamb Fat {mince twice}
1/2 glass of chop Parsley
1 very small chop Purple Onion
2 crashed Garlic Cloves
1/2 very small chop, seed free, hot Green Pepper
1/2 teaspoon Salt
1/2 teaspoon of grounded Black Pepper
3 teaspoon of Soda Water {not the Powder!}
Eggplant:
1 large Baladi Eggplant
Olive Oil
1/2 squeeze Lemon
10 fresh chop Oregano Leaves
Coarse Salt
2 Crashed Garlic cloves
Tomatoes:
3-4 {Tamar} meaty, ripe Tomatoes
2 tablespoon of Raw Tahini {carawan, Nesher… the meaning is for a high quality Tahini with a flavor that reminds us of Halva}
Pinch Salt
Lemon Juice
Cooking:
  1. Roast on an open fire the Eggplant until it burns entirely. Peel it and drain the fluids. Cut to coarse cubes and add Lemon Juice, Garlic, Olive Oil, Salt and Oregano.
  2. Cover in stretch nylon and put aside for it to absorb the flavors.
  3. In a deep bawl, mix the meat along with the fat; add the Parsley, Salt and Pepper. In a small pan, then heat 1 tablespoon of Olive Oil and steam the Onion, Garlic and Hot Pepper for 30 seconds. Add the mixture to the bawl with the spiced meat. Pour in the Soda and knead for 2 minutes. Make medium "Kebabs" shapes by hand and roast tem on a Coal Grill, or on a hot stripes pan with a little Olive Oil.
  4. In the meanwhile, process the Tomatoes in a blender or food processor till you get a smooth paste {you can chop them very small as well} add the Tehini and add some Salt and Lemon Juice.
  5. Plating: on the center of the plate, stack some of the Eggplant, place 4 Kebabs and pour 3 tablespoons of Tomatoes around. Serve with hot Pitas and green Salad.
