סאטה עוף, ברוטב קארי ובוטנים


לפנינו מתכון אסייתי נוסף.
סאטה, או שיפוד, שעליו ישנם מאכלים שונים, מבשרים שונים ועד דגים- הוא מאכל יום יומי ונפוץ מאד במזרח אסיה.
זהו מתכון שאולי חלקכם נתקל בו בעבר, אם במסעדות מתמחות באוכל אסייתי, יפני וכדומה.. ואם במקומות אחרים.

זוהי הגירסה הביתית כמובן והיא טעימה פי כמה מכל כמות מסחרית שמכינים בכל המקומות,
כולל אלו במסעדות. (כמו כל דבר, דברים טובים באים במנות קטנות ..) המתכון כולל מרינדה (משרה), את הבשר והרוטב..כמובן.

מצרכים: ( ל 10 שיפודים קטנים, בערך .. )
חצי קילו בשר "פרגית" חתוך לקוביות גדולות ויפות
למשרה:
1 בצל שאלוט קצוץ דק
1 שן שום כתושה
2 ס"מ שורש ג'ינג'ר (זנגוויל) כתוש
3 כפות סויה בהירה
2 כפות סויה כהה
1 כף סוכר חום
1 כף גדושה רוטב קארי ירוק, או אדום
מיץ מחצי לימון

לרוטב:
1/3 כוס שמן צמחי (עדיף שמן בוטנים)
1 כף סויה בהירה
1 בצל שאלוט קצוץ
1 שן שום כתושה
1 גבעול בצל ירוק קצוץ דק
1/3 כוס חלב קוקוס
2 כפות חמאת בוטנים, או 100 גר' בוטנים רגילים כתושים (לא מומלחים!)

הכנה:
1 - בקערה עמוקה נוסיף את מרכיבי המשרה, ובו נניח את קוביות העוף.
איטמו בניילון נצמד והכניסו אל המקרר לכמה שעות.. עדיף ללילה שלם, אבל שעתיים שלוש יספיקו.
בתום הזמן, שפדו 3-4 קוביות על שיפוד עץ קטן וצלו אותם על המנגל, או לחילופין על מחבת פסים מברזל יצוק.
2 - בסיר קטן חממו את שמן הבוטנים, ואדו את הבצל הלבן עד שקיפות, הוסיפו את הלימון, השום, הבצל הירוק ואת
הסויה ובשלו לכמה דק' נוספות.
3 - הוסיפו את חמאת הבוטנים, או את הבוטנים הכתושים ואת חלב הקוקוס והורידו את האש למינימום.
4 - בשלו את הרוטב כמה דק' נוספות עד שהוא מסמיך קלות וכבו את האש.
5 - עבדו את הרוטב למשחה חלקה בבלנדר, או בבלנד סטיק..
6 - הגישו לכל אחד 2-3 שיפודים שמעליהם הזליפו מהרוטב הסמיך.

"Chicken Sata in Curry Sauce and Nuts"
Here we got another Asian recipe.
Sata, or skewer, that holds different kind of food, from a variety of meat till fish- it is highly common everyday life dish in eastern Asia.
This is a recipe that you may encounter before, whether in Asian restaurants or other places.


This is the home version recipe of course and it tastier than any other commercial restaurants by far. {Such as everything else, good thing comes in small packages}.
This recipe includes marinara.
Ingredients: {10 small skewers}
1/2 kilo of big cubes cut spring chicken
for marinara:
1 small chop Shallot Onion
1 grounded Garlic Clove
2cm of grounded Ginger Root
3 tablespoons of Light Soy
2 tablespoons of Dark Soy
1 tablespoon of Brown Sugar
1 tablespoon of Green or Red Curry Sauce
1/2 Lemon Juice
Sauce:
1/3 glass of Vegetable Oil {preferably Nuts Oil}
1 tablespoon of Light Soy
1 chop Shallot Onion
1 grounded Garlic Clove
1 small chop Green Onion Stalk
1/3 glass of Coconut Milk
2 tablespoons of peanut butter or 100gr of grounded plain Nuts {not salty}
Cooking:
  1. In a deep bowl, add the Marinara ingredients and put in the chicken cubes. Seal the bawl with a stretch nylon and put in the refrigerator for several hours. Preferably the entire night, but 2-3 hours will be sufficed. After chilling the cubes, stick them on wooden skewers and roast them on the grill or on an iron cast strips pan.
  2. In a small pot, heat the Nut Oil, and steam the Onion till clearness, add the Lemon, Garlic, Green Onion and Soy and cook them for several minutes.
  3. Add the Peanut Butter or the grounded Nuts and the Coconut Milk and lower the fire to a minimum.
  4. Cook the sauce for several minutes till it slightly thickens and turnoff the fire.
  5. Process the sauce into smooth paste in a blender or stick-blender.
  6. Serve 2-3 skewers for each with a drizzle of the thick sauce.
