פסטה קרבונרה


הצבא הרומאי אכל את המנה הזו, היא הולכת עד כדי רחוק בהסטוריה, אך זה רק חלק מהאגדה.
האמתי, שאת המתכון גילו רק ב 1944 ברומא, אך סיפורים ובעיקר באיטליה, נוטים להתגלגל למחוזות אחרים
ודמיוניים לפעמים.
אך בואו נשאר בפנטזיה הזו, היא דווקא די מתאימה.
הצבא הרעב של רומא, נכנס לעיר אחרי מסע מפרך וטבחיהם היו חייבים להאכילם אך עם המצאי שהיה באותה העת
במזווי הצבא. אבקת ביצים, בשר חזיר שומני ופסטה כמובן.
מכל אלו, נוצר המתכון המופלא של אחד ממתכוני הפסטה הקלים ביותר להכנס וללא ספק אחד הטעימים והמנחמים
שיש ברפרטואר הקולינארי הרומאי קלאסי.

לשם המנה "קרבונרה" יש מספר סיפורים גם כן, לאיך קיבלה המנה את שמה..
ואחד מהם הוא בכין הפלפל השחור הגרוס שמפזרים על הפסטה לפני אכילתה והמראה שמזכיר גרגירי פחם..
פחד באיטלקית = קרבון..

הינה המצרכים להכנת המנה המיוחדת והקלילה הזו.

מצרכים: (4 מנות )
4 כפות שמן זית
1 חבילת פסטה ארוכה רחבה
2 ביצים
2 חלמונים
300-400 גר' "סטייק" בייקון, חתוך לקוביות זהות (במתכון המקורי משתמשים בגאונצ'לה - בייקון מלחי חזיר)
3 כפות פרמזן מגורדת
3 כפות פיקורינו מגורדת
פלפל שחור גרוס טרי, לפי הטעם..
לעיטור -בצל ירוק חתוך, ושקדים חצויים מולבנים לאקסטרא פריכות.

הכנה:
1 - בסיר גדול מרתיחים 5 ליטר מים מומלחים ומבשלים את הפסטה לפי הוראות היצרן עד לדרגת אל דנטה.
2 - במחבת גדולה ועמוקה, מחממים את שמן הזית ומקפיצים בתוכו את קוביות הבייקון עד להזהבה (שימו לב שלא לשרוף את הבשר!)
3 - בקערה גדולה מאד, טורפים את הביצים והחלמונים, מוסיפים את שני סוגי הגבינה ומערבבים היטב לעיסה חלקה.
4 - שהפסטה מוכנה, מסננים אותה ממי הבישול ומוסיפים אותה למחבת עם שמן הזית והבייקון. מערבבים היטב עד שכל הפסטה תספוג את טעמי השמן והבשר. מבשלים כדקה יחד כאשר מערבבים במרץ.
5 - מעבירים את תכולת המחבת אל הקערה עם הביציעים וטורפים מהר את הפסטה, הבייקון, שמן הזית הביצים והגבינות. חום הפסטה יבשל במקצת את הביצה (אך לא יהפוך אותה לחביתה) ויסמיך את הרוטב עד למצב של קרם צהבהב.
6 - מגישים בקערות גדולות, מפזים מלמעלה פלפל שחור גרוס, את הבצל הירוק והשקדים (אופצינאלי)

Pasta Carbonara

The roman army ate this dish. That is how far this dish goes through in history, but this is just a part of the legend. The truth is that this recipe found only in 1944 in Rome, but stories, mostly in Italy, tend to roll to different and imaginary fields.
But, let's stay in this fantasy, it quite fit.

The hungry army of Rome entered the city after a long journey and their cooks had to feed them with what was left in the pantry, egg powder, pork meat and pasta of course.
From all these, a wonderful easy pasta recipe emerged and without a doubt one of the tasty and comforting the roman culinary repertoire dish has to offer.

The dish name "carbonara" has a number of stories telling the origin of the name, and one of them is because of the grounded black pepper we spread on the pasta before eating it which reminds us of coal grains… coal in Italian= carbon

Ingredients: {4 dishes}  
4 tablespoons of Olive oil
1 pack of long wide pasta
2 eggs
2 yolks
300-400gr bacon "steak", cube dice {in the original recipe they use gounchella – pork cheek bacon}
3 tablespoons of grated parmesan
3 tablespoons of grated pecorino
Fresh grounded black pepper
For decoration – diced green onion and white almonds cut in half for extra crispiness
 
Cooking:

  1. Boil 5lt of salty water in a large pot and cook the past according to manufacture instructions till "Al dente".
  2. Heat the olive oil in a large deep pan, and toss the bacon cubes till golden {be carful not burning the meat!}.
  3. In a very large bawl, scramble the eggs and yolks, add the two cheese types and mix it to a smooth paste.
  4. When the pasta's ready, filter it form the cooking water and add it to the pan with the olive oil and the bacon. Mix it well so all the pasta will absorb the oil and meat flavors. Cook for 1 minute while vigorously mixes it.
  5. Transfer the entire pan contains into the bawl with the eggs and scramble the pasta quickly, the bacon, olive oil, the eggs and the cheeses. The pasta heat will cook the egg a bit {but won't turn it into omelet} and will thicken the gravy to a yellowish cream.
  6. serve in big bawls, spread some ground black pepper, green onion and almonds {optional}
