סלט לבבות עוף, אבוקדו ועלי אורוגולה


בתור קרניבור, סלטים הם לא בדיוק הפיבוריטים שלי.. והמשפט "אני לא אוכל את האוכל, של האוכל שלי"
הולך לפני די בקביעות..אבל נעבור לקצת רצינות, סה"כ קצת ירוק בצלחת לא עשה לאף רע, זה אפילו בריא מסתבר :) .
אני שמחפש תמיד את הדרך להוסיף קצת בשר למנות שלי, מוצא גם את השילובים שיעבדו נכון עם ירק כזה, או אחר.. במתכונים השונים מסביבי. מנסה, משפר לטעמי ואוכל כמובן.

הסלט שהבאתי אליכם היום, מעולה. מכמה סיבות.
אחת מהן שהוא מכיל לא רק בשר, אלא חלקי פנים, לבבות ליתר דיוק! זה חלק מצוין, רך וכיפי למאכל..
ומסתבר שהולך לא רע עם ירק..
אז נכון שזה לא בדיוק "סלט" כזה שמביאים לחברים (של האישה) שנפגשים בערב.. אלא יותר כמנה ראשונה די מגניבה בארוחה מושקעת.. אבל זה עדיין.. סלט.

טוב נו, די לקשקש..

מצרכים: (2 מנות גדולות, או 4 קטנות יותר)
שמן זית
20 לבבות עוף נקיים
2 חופנים של עלי אורוגלה שטופים ומיובשים
1 בצל לבן גדול חתוך לשמיניות
1 כף סוכר חום
3 ענפי תימין טריים
אבוקדו חתוך לקוביות גדולות
מיץ לימון
מלח
פלפל
3- 4 עלי מרווה קרועים

הכנה:
1 - במחבת מחממים 3 כפות שמן זית ומטגנים את הבצל יחד עם הסוכר, קורט מלח ורבע כפית פלפל שחור גרוס, עד שהוא נהפך להיות חרוך וצבוע בגוון חום בהיר מרשים. מורידים מהאש ומניחים בצד.
2 - באותה המחבת יוצקים כף שמן זית נוספת ומחממים על אש גדולה. ממליחים ומפלפלים את הלבבות על קרש חיתוך ומטגנים בשמן הרותח כ 2 דק' לערך, עד למידת מדיום (שימו לב לא לשרוף, או לייבש אותן יתר על המידה) מוסיפים את ענפי הטימין למחבת ומקפיצים את הלבבות יחד איתם, כדי שיספגו טעמים.
3 - בינתיים בקערה מערבבים את עלי האורוגלה, אבוקדו, מרווה, כף מיץ לימון, כף שמן זית ומתבלים במלח ובפלפל.
4 - מצלחתים: בצלחת אישית, עורמים קצת מהבצל המקורמל. מעליו מניחים כמה מהלבבות החמות וערמה מהסלט הירוק. מזליפים מעט שמן זית מכפית מסביב ומגישים עם פוקצ'ה חמה, או לחם צרפתי.

CHICKEN'S HEART SALAD
As a carnivore, salads are not my favorites among food…and the sentence: "I don’t eat my food's food" is pretty much my mantra.
But kidding aside, some green in the plate never hurts anybody, it's apparently even healthy J I always look for another way to add some meat to my dishes, finds the right combination in my recipes to work with this vegetable or another. I try, make the upgrades I like and eat of course. The salad I brought here today is excellent for many reasons.
One of them is that it contains not only meat but internal organs, hearts to be exact. This is a great part, soft and fun to eat… and apparently it works pretty well with vegetable.
So, it is true that it isn’t exactly a "salad" you bring to you wife friends shindig, but more as a pretty cool first course in a well invested meal… but it is still… a salad.
Well, enough chitchat…

Ingredients: {2 large dishes or 4 smaller ones}
Olive Oil
20 clean Chicken's Hearts
2 handfuls of dry washed Rocket leaves
1 1/8 cut large White Onion
3 fresh Thyme Branches
1 large cubes diced Avocado
Lemon Juice
Salt
Pepper
3-4 turn Sage Leaves

Cooking:
  1. In a pan we heat the 3 Olive Oil tablespoons and fry the Onion along with the Sugar Pinch of Salt and 1 teaspoon of Grounded Black Pepper, until it become scorch and colored in an impressive light brown shade. We turn off the stove and put aside.
  2. In the same pan we pour 1 tablespoon of Olive Oil and heat on a large stove. We add Salt and Pepper to the Hearts on a cutting board and fry them on a boiled Oil for about 2 minutes till Medium level {be carful not to born or dry them too much} we add he Thyme leaves to the pan and toss them with the Hearts so they will absorb the flavors.
  3. In the meanwhile in a bawl we mix the Rocket, Avocado, Sage, 1 tablespoon of Olive Oil, 1 tablespoon of Lemon Juice and add some Salt and Pepper.
  4. Plating: in a personal plate, we stack some of the Carmel's Onion. We place some of the hot Heats on top of it and some of the green salad. We drizzle 1 teaspoon of Olive Oil around and serve with hot Focaccia or French bread.
