קציצות תרד, ברוטב עגבניות


לפני המון שנים שהיינו נערים מתבגרים, אחי ואני הכוונה. גרנו בבטחה אצל ההורים כמובן..
שם ללא ספק, אכלנו ואכלנו טוב. אם מעשי ידי אימי, סבתי ואם תחת ידי (שעם הזמן התמקצעו..
ובגין זאת קיבלתי יותר ויותר "הזמנות". טוב נו, כנראה שזה היה בעיקר בגלל שנעשיתי מתלונן סידרתי,
לגבי האוכל שהוגש.. )...
בכל מקרה; ערב אחד החלטתי שאני מכין קציצות מטוגנות, ברוטב. כדי שלאחי ולי תהיינה איזו ארוחה חמה ונעימה לטרוף..(!) אתם צריכים להבין שבאותם השנים, לא עשינו כמעט כלום חוץ מלאכול.. והרבה.
אבינו שיחיה עד 120 (אוהבים אותך מאד!) היה "מתלונן" שהוא מגיע לסופר 3 פעמים בשבוע, כדי להאכיל אותנו.
היינו כמו ארבה.. :)

אך הקציצות.. כן שכחתי.. הקציצות לא היו סתם קציצות, אלא הן היו קציצות עם תרד. לא יודע מה חשבתי ומה תכננתי.
אבל ידעתי כבר אז, שירק בקציצות זה דבר טוב. במקרה הייתה שקית גדולה של תרד במקרר וחשבתי .. וואלה.. נכניס תרד. כך נוצרה אולי אחת מהמנות המיתולוגיות שאחי בעיקר זוכר את טעמה מאותו הערב ועד היום.

זהו מתכון שמוקדש לו.

מצרכים: (4 מנות וקצת יותר)
לקציצות-
1/2 קג' בשר עגל טחון מנתח 'אונטריב' (זהו נתח שנמצא בשיפולי הצלעות), אפשר גם עם נתח אחר, צוואר למשל.
1/2 קג' תרד טרי ושטוף
1 בצל לבן בינוני קצוץ דק (או מגורד על הפומפיה)
2 שיני שום כתושות
2 ביצים
1 פרוסת לחם עבה מאד, ללא ה"קשה" מושרית במים, סחוטה ומפוררת.
מלח ופלפל לפי הטעם.
קמח
ושמן צמחי, לטיגון

לרוטב:
1/3 כוס שמן זית
800 גר' עגבניות קלופות וקצוצות (אפשר גם משומרות מסוג משובח)
2 שיני שום מעוכות (פשוט תנו להם מכה עם "לחי" הסכין..
מי החליטה של התרד (תכף נגיע לזה)
1 פלפלון שאטה קצוץ (או חצי כפית של צ'ילי יבש)
כף גדושה של רסק עגבניות
1/2 כוס מים

להכנה:
1 - בסיר על אש בינונית - שמים את התרד ללא כל שמן, או נוזל ומכסים. מאדים את התרד עד שהוא הופך להיות רך מאד ובצבע ירוק כהה. מוציאים אותו למסננת, שמתחתיה יש קערה ומניחים בצד כדי שיגיר נוזלים.
אחרי שהוא מתקרר מעט, סוחטים אותו בין שתי כפות הידיים, לתוך הקערה עם הנוזלים שהגיר,את מה שנשאר בו.
עד שמקבלים- גוש ירוק מכווץ.. (כן זה מה שיוצא מחצי קילו.. לא נשאר הרבה אה? ;) ).
מניחים את הגוש על קרש חיתוך וקוצצים דק דק עם סכין חדה.
2 - מערבבים היטב בקערה, את מצרכי הקציצות; הבשר, הבצל, השום, הביצים, הלחם והתרד שעתה קצצנו.
ממליחים ומפלפלים לפי הטעם. אוטמים את הקערה בניילון נצמד ומכניסים למקרר לשעה לפחות.
3 - בינתיים, בסיר בינוני (אפשר להשתמש בזה שחלטנו את התרד, רק נגבו אותו מנוזלים) יוצקים את שמן הזית ומחממים על אש קטנה-בינונית. מטגנים קלות את פלפל השאטה ואת השום והוסיפו את העגבניות (זהירות זה קופץ).
מערבבים היטב, מוסיפים קורט סוכר, את רוטב העגבניות, המים ואת מי החליטה שסחטנו והגיר התרד.
מעלים טיפה את האש ומצמצמים מעט את הנוזלים.
4 - במחבת רחבה, מחממים שמן צמחי. יוצרים קציצות טיפה מאורכות מהבשר הריחני, מגלגלים בקמח, מנערים ומטגנים במשך חצי דקה מכל צד עד לגוון זהוב ויפה (שימו לב, הטיגון הוא רק התחלת הבישול שלהם, לא צריך להגזים).
5 - אחרי שסיימנו לטגן את כל הקציצות, מעבירים אותן בעדינות(!) לרוטב העגבניות שמבעבע לידנו. סוגרים עם מכסה את הסיר ומנערים בסיבובים- עד שכל הקציצות תסתדרנה בסיר וכולן תתעטפנה ברוטב.
מבשלים כ 15 דק' נוספים ומכבים את האש.

מגישים עם אורז לבן, או עם כיכר לחם טרי מתפצפץ...
אנחנו אכלנו את הקציצות היישר מהסיר, עם כיכר לחם שלם..(!).. מיותר לציין שלא נשאר כלום באותו הערב.

A long time ago, when we were teenagers, my brother and I that is, we lived in our parent's house to our pleasure.
There, without a doubt we ate and ate well! If by my mother's hand or my grandmother or by me {after a while I received more and more "orders", basically because I became a series complainer for the food that people served me}
In any case, one evening I decided to make fried Meatballs with some sauce to swim in. it was basically, for my brother and I, to have some hot pleasant meal to devour…{!}
You have to realize that at that time we haven’t done anything besides eating… a lot! Our father, may he live long and prosper {we love you dearly} was constantly complaining to have reached the supermarket three times a week to feed us. We were like locust J
But the Meatballs… yes, I forgot about them, the Balls weren’t just any Balls, they were Spinach Meatballs. I don’t know what I was thinking or planning, but I knew one thing, that Vegetable in Meatballs is a good thing. In any case, there was a large bag of Spinach in the refrigerator and I thought…"let's try it". That was the foundation of one of the mythological dishes, that my brother remembers its taste from then till this very day.
This recipe is dedicated to him.
{By the way, for the one who hasn't paid attention – some of my recipes are translated by my brother. Hopefully, by doing that, we can reach more people}.
Ingredients: {4 dishes }
Meatballs:
1/2 kg of Aontereve cut grounded Veal {a cut from the ribs}, you can use a different cut such as Neck.
1/2 kg fresh washed Spinach
1 chops medium size White Onion
2 grounded Garlic Cloves
2 Eggs
1 very thick piece of Bread without the crust, soaked and drained
Salt/Pepper
Flour
Vegetable Oil

Sauce:
1/3 glass of Olive Oil
800gr of pealed chop Tomatoes {you can use high quality cans as well}
2 smashed Garlic Cloves {just hit them with the knife}
Water from the Spinach scalding {we will come to it shortly}
1 Shata chop Pepper {or 1/2 teaspoon of dry chilly}
1 tablespoon of Tomato Sauce
1/2 glass of water

Cooking:
  1. On a medium fire, in a pot, place the Spinach without any Oil or liquid and cover it. Steam the Spinach until it turns very soft in a dark green color.
  2. Pull it to a strainer which sits on a bawl and put aside to let it drain the water. After it chilled a bit, squeezed it with two hands into the bawl until you get a shrunken green lump {yes, this is what you get from 1/2 kg of Spinach, not much…uh?}. Place the lump on a cutting board and chop very small with a sharp knife.
  3. Mix the Meatballs ingredient well in a bawl; the Meat, Onion, Garlic, Eggs, Bread and the Spinach, just chopped. Add the Salt and Pepper. Sealed the bawl with stretch nylon and put it in the refrigerator for at least an hour.
  4. In the meantime – on a medium size pot {you can use the one we used for the Spinach, just wipe it from the liquids}, pour the Olive Oil and heat it on a small-medium stove. Fry a bit the Shata Pepper and Garlic and add the Tomatoes {carful, it bounces}. Mix it well; add a pinch of Sugar, the Tomatoes Sauce, water and the Spinach water along with the Spinach itself. Turn the heat up a bit and reduce the liquids a bit.
  5. In a wide pan, heat the Vegetable Oil. create a bit long ,Meatballs from the aromatic meat, roll it in the Flour, shake and fry them for 30 second in each side until receiving a beautiful gold shade {attention – the frying is only the start of their cooking – you don’t need to exaggerate}.
  6. After finishing frying the Meatballs, gently move them to the bubbling Tomatoes Sauce beside us. Close the pot and shake in round movements till all the balls align in the pot and covered with the sauce. Cook it for 15 minutes and close the stove.
Serve with white rice or with a crusty loaf of bread.
We Ate the Meatballs straight from the pot, with an entire loaf of bread {!}…
Needless to say there none left that night.

    אני חושבת שהקציצות האלו הן הכי טעם של בית שאפשר.
