כבדי עוף בניחוח רוזמרין, על תפוח אדמה בתנור.


כבד עוף, אולי חלק הפנים המפורסם ביותר וזה שכנראה הכי שכיח במטבח הישראלי. הוא זול יחסית וקליל להכנה. (למרות שלא מעט אנשים הורסים אותו בקלות בצליית יתר וייבושו) יש לשים לב לזמן הצלייה וכך להבטיח מעטפת קריספית ומרקם רך וקרמי מבפנים.
תנו לי כבד עוף בכל מתכון ואני מאושר.. על סלט עלים ירוקים, ברוטב של שמן וכמון, עם יין מצומצם
פטריות ועוד ועוד.. (כל המתכונים האלו יהיו בהמשך, מבטיח)

הפעם, חשבתי להתחיל עם הצורה הקלאסית ואולי הטעימה ביותר שיש לכבד עוף לטעמי, אבל עם טוויסט (כמובן). הוספתי קצת ניחוחות של רוזמרין טרי, זה מקפיץ את המנה לרמה אחרת לגמרי ונותן לה "עידון" שונה לגמרי.
בנוסף, הכי טעים לאכול מנה של כבדי עוף,  עם תפוחי אדמה חמים. אם פירה קרמי, או תפוח אדמה שנאפה בתנור לשעה ויותר וקיבל טעם של "מדורה" כמעט. הלכתי הפעם על המדורה.

מצרכים: (4 מנות)
שמן זית משובח
1/2 קג' כבד עוף נקי
מלח גס
פלפל שחור גרוס
4 תפוחי אדמה בינוניים שטופים היטב ומנוגבים
2 גבעולי רוזמרין טריים
2 גבעולי טימין {מיורן} טריים (או טימין יבש)

הכנות:
מחממים תנור ל 220 מעלות, על טורבו!
1- בקערה מוסיפים 3-4 כפות שמן זית, קורט מלח, פלפל שחור גרוס ואת עלי הטימין. מצפים את תפוחי האדמה בשמן המתובל ועוטפים היטב ב"דף" אלומיניום, כך שיהיה הרמטי. מכניסים לתנור לשעה, או עד שתפוחי האדמה רכים מאד (מחדירים אחרי שעה, סכין ואם היא חודרת פנימה "כמו חמאה", זה מוכן)
2 - בקערה מוסיפים 4-5 כפות שמת זית משובח, מתבלים במלח, פלפל וגבעולי הרוזמרין חתוכים לכמה חלקים (לא צריך להפריד את העלים מהגבעול), מניחים את הכבד הנקי בתוך הקערה ומצפים אותו היטב בשמן המתובל.
3 - מחממים מחבת טפלון על כירה גדולה, על שהיא "מעשנת" (לא משמנים אותה!) מניחים כמה "אונות" של כבד בכל פעם במחבת הרותחת. מכת החום שהכבד מצופה השמן מקבל, יוצרת מעטפת קריספית ו"סוגרת" את הכבד. כך הוא נשמר עסיסי וקרמי מבפנים וקריספי ושחום מבחוץ. מסובבים לצד השני עד שמרגישים שהוא "גמיש" מספיק למידת M {מי שרוצה קצת יותר עשוי מבפנים, שישאיר לעוד 20-30 שניות ויהפוך מידי פעם שלא ישרף} כך ממשיכים עד שכל הכבדים מוכנים.
4 - מוציאים תפוח אדמה מנייר הכסף, חורצים X כמעט עד לתחתית שלו ומניחים עליו 2-3 אונות כבד, מפזרים רוזמרין טרי (שישב בשמן הזית), פלפל אדום חריף למי שאוהב ומזליפים מעט משמן הזית המתובל מסביב.

תוספת: בתמונה למעלה, יש בצד שמאל בצלחת גם שיני שום אפויות. למי שאוהב (כמוני) יכול בזמן שתפוחי האדמה נאפים בתנור, "לזרוק" גם כמה ראשי שום כאלו, זה יוצא מעדן. איך עושים? החליפו בסעיף 1 את תפוחי האדמה בראשי שום. זה הכל.

Rosemary-scented chicken livers, on baked potatoes

Chicken liver, maybe one of the most famous internal organs there is and probably the most common in the Israeli kitchen. It is relatively cheap and pretty easy to make. {Although, more than a few people ruin it very easily by overcook it and dry it}. You must pay attention to the roasting time, thus ensure a crispy cover and a smooth creamy texture inside.
Give me a chicken liver in every recipe and I'm happy… on a green leaves salad, in a cumin and oil sauce, with a reduction wine and mushrooms etc. {all these recipes will be added, I promise}.

This time, I thought to begin with the classic and maybe the tastiest form of chicken liver for me, but with a twist {of course}. I added a bit of a fresh rosemary aroma, it takes this dish to a whole new level and give it a different "finesse" entirely.
Additionally, it is best to eat a chicken liver dish with hot potatoes, whether with a creamy mash potatoes or a baked one which baked in the oven for an hour or more and received almost the flavor of a bonfire. I went on the bonfire.

Ingredients:
Fine Olive Oil
1/2kg of clean chicken liver
Corse salt
4 medium washed and well wiped potatoes
2 fresh rosemary stalks
2 fresh thyme stalks

Cooking:
heat the oven to 220 degrees, Turbo!

  1. Add 3-4 tablespoons of Olive Oil into a bawl, a pinch of Salt, Black grind Pepper and Thyme leaves. Cover the potatoes with the spicy Oil and wrap tightly in aluminum foil, hermetically. Put to the oven for an hour, or until the potatoes are very soft {after an hour we pierced a knife in, if it inserted smoothly, it's done}.
  2. Add 3-4 tablespoons of fine Olive Oil add salt, pepper and cut Rosemary stalks {we don’t have to separate the leaves from the stalk}; place it on the cleaned liver in a bawl.
  3. Heat a Teflon pan on a large stove, until it "smokes" {do not oil it} place a few pieces of the liver separately on the smoky pan. The heat hit that the oily covered liver created a crispy cover and "closed" the liver. In that way it remains juicy and creamy inside and crispy on the outside. roll it to the other side until you feel it "flexible" to medium {those who wants more "done" in the inside, keep it for another 20-30 second and roll it from time to time not burning it}, keep it until all the livers are ready.
  4. pull out the potatoes from the aluminum foil, pierce a X section almost through the bottom and place 2-3 liver pieces, we spread some fresh Rosemary {that sat in the olive oil}, red hot pepper, for those who likes, and drizzle a bit of the spicy Olive Oil around it. 
 
In addition: in the photo above, in the left side on the plate you can see baked garlic cloves. For those of you who like, {as I do} can toss some of these garlic cloves along with the potatoes, it is a delicacy. How to make it? Change section 1. The potatoes with the garlic head, that’s all.
