פסטה אלמטריציאנה (pasta alla matriciana)



לקחתי את זה ברצינות. אם תחפשו, תראו שיש לי בבלוג מגוון פסטות לא קטן. חלקן שכיחות כמו בולונז וכדומה
אך רובן דווקא כאלו שלא מוצאים בכל בלוג אוכל, ספר מתכונים שקונים בחנות, או אפילו במסעדות בארץ.
אני מאד אוהב אוכל איטלקי, את זה כולכם יודעים כבר. לאחרונה יש בי התשוקה לפסטות מיוחדות ועשירות במיוחד.
לקחתי על עצמי לעשות קצת מחקר על פסטות מהמולדת עצמה. באיטליה יש אזורים רבים, כאשר לכל אזור יש
חומרי גלם מאפיינים וטעמים שהחיך שלהם התרגל אליהם.

בגדול, בדרום הכל אדום. עם עגבניה ושמן זית ובצפון נראה הרבה יותר לבן משמנת. דגים ופירות ים לרב.
אך בין לבין, יש עולם רחב מאד של טעמים, חומרי גלם משגעים, תבלינים וטאצ' שונה למנות דומות.

הפעם, מתכון מ"המולדת".
במקור מהעיר "מטריצי".. אך היום היא מוכרת יותר מאזור רומא דווקא.
במתכון האותנטי במקום פנצ'טה, היו משתמשים בלחי חזיר מומלחת, אך באין ציפור שיר.. פנצ'טה היא הכתובת. שימו לב, בייקון רגיל שקונים במעדניות, או ב"טיב טעם", הוא לא תחליף (למרות שיעבוד). בגין הטעם המעושן והסוכרים שיש בו. הוא קצת משנה את הטעמים העדינים והקרמיים של המנה הזו.
פנצ'טה לא כזו קלה להשגה, אבל יהיה לכם נחמד לגלות בקרבתכם איזו מעדניה כן מחזיקה, לא?
ד"א בלא מעט מעדניות יש משהו שנקרא "רולדה שפק", זה די קרוב לפנצ'טה ותוכלו להשתמש בוארסיה הזו למתכון הנ"ל ולאחרים כמובן.

דבר נוסף, במקום בוקטיני, שסה"כ כיום לא קשה לקנות\למצוא בסופר (יש המון סוגים מהמון ברנדים) אפשר להשתמש בטאליטאלה, או בספגטי עבים במיוחד (נניח מס 12).


מצרכים: (4 מנות ראשונות = 100גר פסטה לאחד)
1 חבילה של בוקטיני (או פסטה ארוכה עבה אחרת) סה"כ 500 גר'
1/3 כוס שמן זית
4-5 עגבניות תמר, מקולפות, ללא זרעים וליבה, חתוכות לקוביות
150 גר' פנצ'טה חתוכה לקוביות קטנות (1X1 ס"מ)
חצי פלפל אדום חריף קצוץ דק (או שלם אם רוצים להוציא אותו מהרוטב שיתן רק קצת טעם)
1/2 בצל לבן פרוס דק
מלח ופלפל לפי הטעם

להכנה:
1 - בסיר גדול להרתיח 5 ליטר מים, מומלחים ולבשל את הפסטה עד לדרגת 'אל דנטה'.
2 - במחבת גדולה מחממים את השמן ומטגנים את הפנצ'טה עד להזהבה וקריספיות. מוציאים עם כף מחוררת ומניחים על נייר סופג.
3 - בשומן הנותר במחבת, מזהיבים את הבצל ואת הפלפל החריף. מוסיפים את העגבניות ומערבבים על אש נמוכה-בינונית ל 6-7 דק' בערך. מוסיפים את הפנצ'טה ומערבבים הכל יחד לדקה נוספת.
4 - מסננים את הפסטה ברגע שהיא מוכנה ומוסיפים אותה למחבת הגדולה. מערבבים יחד עם הרוטב לדקה, או שתיים עד שהרוטב יספג בפסטה ומכבים את האש. (למי שאין מחבת כזו גדולה כדי להכיל חבילת פסטה שלמה ורוטב, שפשוט יהפוך כיוון. סננו את הפסטה והחזירו אל הסיר, תיצקו את כל הרוטב מהמחבת, אל הסיר וערבבו שם את הכל)
5 - מגישים לכל סועד בקערה עמוקה, רבע מהכמות ומגרדים למעלה פרמז'ן משובחת.

I have taken it seriously. If you look, you may find that this blog has many types of pasta recipes. Some of them are common such as Bolognese etc. but most of them are those you can't find in any recipe blog, book, or even restaurants in Israel.
I love Italian, that is common knowledge, but recently I crave for rich special pasta in particular.
I took upon my self to make some research on pasta from it motherland. There are many parts in Italy, where each part has a unique and defined raw material and flavors that their mouth used to.

Generally, in the south it is all red from tomatoes and Olive Oil. The north is looking whiter from the usage of cream, fish and sea food. However, between the two there is a whole world of flavors, wonderful raw materials, spices and a different touch for different dishes.

For now, here is one recipe from the motherland like I promised.
It comes originally from the Matriciana city, but it is most familiar from Rome nowadays.
In the authentic recipe, instead of 'pancetta' were 'salty pig cheek', but if you can't find one, 'pancetta' is the replacement. Pay attention, regular "bacon" that you can buy in delis or TIV TAAM, is not a replacement {although it may work}. Because of its smoky taste and the sugars he contains, it changes the creamy, delicate flavors of this dish. Pancetta is not easy to get, but it will be nice to know which deli close by does hold it, right?
By the way, in many delis there is something that calls "spec Roll", it is pretty close to pancetta and you can use it in this version to this recipe and others of course.

Another thing, instead of buccatini, that it is relatively easy to buy nowadays in the market {there a lot of brands} you may use Taliatala or especially thick Spaghettis {no. 12}.

Ingredients: {4 entrees = 100gr pasta per person}
1 pack of buccatini {or a long thick pasta} total 500gr
1/3 glass of Olive Oil
4-5 Tamar tomatoes, peeled without core and seeds, cube diced
150gr pancetta, small cube diced {11cm}
1/2 red hot pepper, small chopped {or a whole one if you want to pull it out from the sauce, only for flavor}
1/2 white onion, thin spread
Salt and pepper by taste

Cooking:
  1. Boil 5 liter salty water in a large pot and cook the pasta to "al dente"
  2. Heat the Oil in a large pan and fry the pancetta till it golden and crispy. Pull it out with a slotted spoon and place it on a paper towel.
  3. In the grease which left in the pan, golden the onion and hot pepper. Then add the tomatoes and mix it on a low-medium stove for about 6-7 minutes. Add the pancetta and mix it all together for another minute.
  4. Filter the pasta when it’s ready and add it to the large pan. Mix it with the sauce 1-2 minutes till the pasta absorb the sauce and turn off the stove. {for those of you who doesn’t hold a large pan to contain a pack of pasta and the sauce, simply turn the direction of actions. Filter the pasta and put it back to the pot, pour the sauce from the pan to the pot and mix it all there).
  5. Serve to each diner in a deep bowl, 1/4 of the amount and scrape fine parmesan on top.

  2. חחח, זה מה שנשאר ממנו אחרי כל כך שימוש.. זה היה וואחד בלוק שבקושי היה אפשר להרים. בכלל, נראה לי שהגיע "להביא" חדש..
