לביבות תפוח אדמה, סלמון מעושן, ביצה וקרם גרגר נחלים



לפעמים הדברים הפשוטים בחיים הם גם הטובים, הטעימים, הנעימים ואלו שאנחנו מתחברים אליהם הכי הרבה.
חשבתי לא מעט על ארוחות קלילות. כאלו שאפשר להכין לארוחת ערב, בוקר או בראנצ'.
שיהיו תמיד טעימות, לא מהמון מרכיבים ושלא יקחו יותר מידי זמן כמובן.
אך כמו כל דבר שאני מכין, שלי לפחות נראה די פשוט ומהיר, יהיו כאלו שיגלגלו עניים או יתפנקו ויעזבו.
כולי תקווה שיש ביניכם כאלו שיודעו להעריך את הטעמים הפשוטים. הם מתחברים כל כך טוב ומהווים סינרגיה מופלאה
בפה.
הנה לפנינו מתכון כזה, פשוט, נחמד, נראה טוב ומתאים לכל שעות היממה.

מצרכים: (4 מנות בערך)
3-4 תפוחי אדמה אדומים, בינוניים. קלופים ומגורדים גס
1 בצל לבן מגורד דק
2 גבעולי בצל ירוק קצוץ דק
1-2 ביצים גדולות טרופות
2 כפות קמח לבן
מלח ופלפל שחור גרוס
3-4 שומן אווז (שמאלץ) לטיגון (אפשר להחליף בשמן רגיל, לתוצאה קצת פחות טובה לטעמי)
4 ביצים שבושלו במים רותחים כ 5 דק' בלבד.
4-8 "סרטים" של סלמון מעושן מסוג איכותי
צרור של 'גרגר נחלים'
3/4 כוס שמנת מתוקה
מלח ים אטלנטי
פלפל לבן גרוס

הכנה:
1 – סננו היטב את הנוזלים מתפוחי האדמה, תערבבו אותם יחד עם הבצלים, הקמח והביצה עד למסה הומוגנית.
תבלו במלח ובפלפל שחור גרוס לפי הטעם.
2 – חממו במחבת בינונית עד גדולה, שומן אווז (שמאלץ) וטגנו את הלביבות בגודל כף מהבלילה (בערך 6X6 ס"מ) עד להזהבה מושלמת משני הצדדים. להעביר אל צלחת עם נייר סופג לבינתיים.
3 – את צרור עלי גרגר הנחלים חילטו במשך כמה דק' במים רותחים ומומלחים קלות, לסנן ולשטוף במים קרים מאד כדי לעצור בישול! תחממו בסיר קטן את השמנת והוסיפו אליו את העלים החלוטים. ערבבו היטב ותבלו במלח ובפלפל. בעזרת בלנדר מוט, הקציפו את הרוטב עד שהוא חלק ומשיי בצבע ירוק בהיר.
4 – לצלחת: במרכז צלחת הניחו זוג לביבות, מעליהם, סרט של סלמון מעושן, חצי ביצה והזליפו מעט מהקרם העשיר מעל. אפשר להוסיף עוד נגיעה של מלח ים אטלנטי ופלפל לבן גרוס מעל הביצה.

Potatoes pancakes, smoked salmon, egg and watercress cream

Sometimes the simple things in life are the best things, the delicious and the pleasant ones we are strongly attached to.
I thought plenty on light meals, meals you can make for dinner, breakfast or brunch. They will always be tasty and not with many ingredients and of course will not take long to make.
However, like anything I make, mine seems quick and simple but there always be some who roll their eyes or will be spoiled and leave.
I strongly hope there are among you who will know to appreciate the simple flavors. They are well connected and have a wonderful synergy in the mouth.
Here is such recipe, simple, nice, looks good and fit for any time in the day.

Ingredients: {4 dishes}
3-4 red medium potatoes, peeled and coarsely grated
1 white onion, thin grated
2 green onion stalks, thin chopped
1-2 large eggs, scrambled
Salt and ground black pepper
3-4 goose fat {schmaltz} for frying {you can change it with regular oil for a less result}
4 eggs, cooked in boiled water for only 5 minutes
4-8 strips of smoked salmon, high quality
1 stalk of Watercress
3/4 glass of sweet cream
Atlantic sea salt
Grounded white pepper

Cooking:

  1. Filter the fluids from the potatoes well, mix them with the onions, the flour and the egg to a homogenous mass. Spice it with salt and grounded black pepper to taste.
  2. Heat the goose fat in a medium pan and fry the pancakes, palm size {about 6x6cm} until perfect golden from both sides. Transfer them to a plate with a paper towel for now.
  3. the watercress stalk scald for few minutes in lightly salty boiled water, filter them and wash with very cold water to stop the cooking! Heat in a small pot the cream and add the scalded leaves. Mix it well and spice with salt and pepper. With a blender stick, beat the sauce so it will become silky smooth in a light green color.
  4. plating – in the centre of the plate place two pancakes and on top a smoked salmon stripe, half an egg and drizzle some of the rich cream on top. You may add a touch of Atlantic sea salt and grounded white pepper on the egg.

לביבות תפוחי אדמה


שאריות. למרות שאני בדרך כלל מאד מתוכנן במטבח והמנות שאני מכין מוקצבות מאד, על פי מספר האנשים שאני עומד להאכיל בדרך כלל, בתוספת קצת.. כדי שלא יחסר, ישארו שאריות.
בגדול, שאריות אפשר לחלק לכמה קבוצות. אלו שחייהן ארוכים יחסית. כך נוכן לחמם יום למחרת, מבלי לאבד יותר מידי
מטעמן. אלו שזורקים.. אם הן מעטים מידי כדי לשים בקופסה, או שפשוט אנו יודעים מראש שלא יעזור לנו כלום ביום למחרת ולא נוכל לאכול את זה. הקבוצה האחרונה היא שאריות שניתן למחזר. ז"א שאפשר להכין מהן מאכלים שונים עם טיפה דמיון ועוד קצת תוספות.

אני אישית מגיע מבית שגדל על בית שלא זרק כלום ואומנות המחזור הייתה רצינית ביותר. למדתי עם השנים כמה טריקים
אבל בגדול, אני אוהב אוכל טרי וחדש, כך שאני מתנסה בכך די מעט.

המתכון הנ"ל פשוט מאד וזו אחת השיטות שאני משתמש במחזור שאריות.. ובפרט בשאריות של פירה תפוחי אדמה.
לפירה תפוחי אדמה יש 2 סיומות.. או שנשאר כמה כפות.. או שחסר.. אני תמיד מכין קצת יותר, מפחד שלא יהיה מספיק לכולם.. כך שמידי פעם יש לי, כן.. שאריות.
מהן אני מכין את הלביבות הטעימות ביותר שישנן. הם רכות, מלאות בטעמים חדשים ואפשר לאכול טונה מבלי להתבלבל.. הן עד כדי כך טעימות.

המתכון כמובן בא בעקבות שאריות פירה תפוחי אדמה, אך אתם מוזמנים כמובן להכין פירה במיוחד עבורם
מבלי להמתין שיהיה לכם שאריות..(פרס למי שספר כמה פעמים כתבתי את המילה שאריות)

מצרכים: (10-15 לביבות בערך..)
שמן צמחי לטיגון
שאריות פירה ששוות לפירה מאחד וחצי תפוחי אדמה בערך
2 ביצים
3 כפות קמח לבן רגיל
1 גבעול בצל ירוק קצוץ
1/2 בצל לבן, או סגול קצוצים דק
מלח לפי הטעם
פלפל שחור גרוס לפי הטעם
2 כפות פטרוזיליה קצוצה
{בעקרון, אתם יכולים להכניס פנימה כמעט כל דבר שבא לכם, שמיר, כוסברה למי שאוהב, ועוד ועוד)

הכנה:
1 - בקערה גדולה מוסיפים לפירה, את כל שאר המרכיבים ומערבבים היטב עד לקבלת עיסה הומוגנית וחלקה.
2 - במחבת רחבה, חממו את השמן על להבה בינונית\קטנה ובעזרת כף- צקו מהעיסה מידה שווה אל תוך השמן החם.
היפכו שהצד המטוגן מגיע לצבע זהוב ויפה והמשיכו לטגן למשך חצי דקה נוספת לצד השני. הוציאו לנייר סופג.

הגישו עם סלט ביצים, או כל סלט שבא לכם.

Potato latkes
Leftovers. Although I usually very organize and calculate in my kitchen and my dishes are very personalize and ration according to the number of people I'm about to feed, with a little extra, so nobody will leave hungry, there will be leftovers.
Leftovers can be divided to a few groups. Those who has a long lifetime; hence we can reheat them the next day and won't loose much of their flavors. The second are those we throughout. If because there not much to put in a box or we just know in advance that we won't eat them the next day. The last group is those which we can recycle, that means we can make different dishes from them with a little imagination and some ingredients.
I, personally, come from a house that didn’t through much and the recycling art was very serious… I learned, over the years, a few tricks, but basically, I like fresh new food, so I don’t practice with this art very much.
This recipe is very simple and is one of my methods that I use in recycling leftovers, specifically, mash potatoes leftovers.
A mash potato has two endings. One is that there are a few spoons left or none left. I always make extra from the fear that it won't be enough for everybody, so occasionally I do have leftovers. From these leftovers I make the tastiest potato's pancake there is. They are soft, filled with novice flavors and you can eat tons of them without worrying, they are that good.
The recipe, of course, comes from the mash potatoes leftovers, but you are welcome to make a mash potato just for them, without waiting for real leftovers.
Ingredients: {10-15 pancakes}
Frying Vegetable Oil
1 1/2 mash potatoes leftovers
2 Eggs
3 tablespoons of plain White Flour
1 chop Green Onion stalk
1/2 small chop White / Purple Onion
Salt
Grounded Black Pepper
2 tablespoons of chop Parsley
{Basically you can add anything you want, dill, coriander and more}
Cooking:
  1. In a large bawl we add to the Mash potatoes all the ingredients and mix them well till receiving a smooth homogeneous paste.
  2. In a wide pan, heat the Oil on a medium-small fire stove in with a tablespoon, pour some of the paste, in an equal amount, to the hot Oil. Turn when the frying side becomes a beautiful golden shade and keep frying the other side for another 30 seconds. Pull out to a paper towel.
Serve with Egg salad or any other salad you want.
