תבשיל עוף עם פטריות ותפוחי אדמה


בין היתר, אני מכין לא מעט תבשילים שהם "בסיר אחד".
בלי הרבה תחכום ועם המון מסורת של תבלון עשיר, ארומות משכרות ובישול ארוך.

הנה אחד מהם, שהכנתי לאחת מארוחות הצהריים בשבת חצי חורפית.
מלווה לתבשיל -סלט ירקות קצוץ עם המון פטרוזיליה שמן זית, לימון ובקבוק יין קריר ומרענן.

למצרכים: (4 מנות)

שליש כוס שמן זית
1.5 קג' עוף מחולק (אני מעדיף להשתמש בירכיים ובשוקיים)
2 בצלים גדולים, פרוסים
סלסלת פטריות שמפיניון לבנות - טריות (עשו לעצמכם טובה, אל תשתמשו בשימורים)
פלפל אדום אחד, חתוך לרצועות
4 תפוחי אדמה בינוניים חתוכים לקוביות גדולות
4 שיני שום מעוכות (רק לתת מכה עם צד הסכין)
מלח
פלפל
כפית גדושה פפריקה אדומה- מתוקה
כפית שטוחה פפריקה אדומה- חריפה
חצי כפית כמון
חצי כפית קארי צהוב\או כורכום למי שאין קארי
חצי כפית טימין יבש\או טרי
1 מקל קינמון
כף רסק עגבניות
מים עד כדי כיסוי

להכנה:
המנה דורשת הכנה בקיצוץ של כמה דק ובישול של כמה שעות, כולל בתנור. ככל שהמנה תתבשל יותר,
כך טעמה יהיה עשיר וטוב יותר. כדאי להכין אותה כמה שעות לפני ההגשה, כך שתתבשל בתנור לזמן ארוך.

נחמם תנור אפיה בחום של- 180 מעלות.
במקביל:
בסיר גדול, נחמם את השמן ונטגן את הבצל עד להזהבה,
נוסיף את חלקי העוף לאחר שתיבלנו אותם במלח ובפלפל.
נטגן אותם קלות מכל הצדדים ונוסיף את רצועות הפלפל האדום, את הפטריות ואת תפוחי האדמה.
נתבל בכל התבלינים הנותרים ונוסיף כמובן את השום ואת רסק העגבניות (את הפטרוזיליה, אנו שומרים לסוף).
נוסיף מים עד כדי כיסוי ונערבב קלות בכף מעץ כדי שהתבלינים, המים והמרכיבים הנוספים יפגשו אחד את השני.
נכסה את הסיר וניתן לו להתבשל על אש בינונית כשעה.
בתום הזמן - נעביר את תוכן הסיר לקערת חרס (למי שאין יכול להמשיך עם סיר הבישול, רק שימו לב שהוא מתאים לתנור אפיה) ונמשיך לבשל בתנור.
אחרי שעה של שהיה בתנור (180 מעלות), נוריד את הטמפרטורה ל 140 - לשעתיים נוספות.
לפני ההגשה נפזר פטרוזיליה טרייה קצוצה.
הבית, כבר הרבה לפני - יתמלא בריחות משכרים מהתבלינים וממקל הקינמון.
{כאמור, ככל שיהיה לכם זמן רב יותר בתנור, כך המנה תשתפר}

Chicken stew with mushrooms and potatoes

Among other things, I cook quite a bit stews that "all in one pot".
Not very sophisticated cooking but with a lot tradition of rich spiciness, intoxicating aromas and long cooking.

Here is one of them that I've made for one of semi winter Saturday lunches.
As adding to the stew, a chopped vegetable salad with a lot of parsley, Olive oil, a lemon and a cool and freshening bottle of wine.

Ingredients: {4 dishes}

1/3 glass of Olive Oil
1.5kg divided chicken {I prefer to use thighs and drumsticks}
2 large spread onions
1 basket of fresh white champignon mushrooms {do yourselves a favor, do not use canned ones}
1 red pepper, stripes cut
4 medium potatoes, big cube cut
4 crushed garlic cloves {just hit it with the side of your knife}
Salt
Pepper
1 big teaspoon red paprika {sweet}
1 flat teaspoon re paprika – hot
1/2 teaspoon of cumin
1/2 teaspoon of yellow curry / or turmeric
1/2 teaspoon of dry thyme / or fresh
1 cinnamon stick
1 tablespoon of tomatoes sauce
Water to cover it all

Cooking:
The dish requires preparation of chopping for a few minutes and cooking for several hours including oven time. The longer the dish will cook the tastier and better it will be. It preferred to cook several hours before serving it so it will cook in the oven longer.

Heat the oven to 180 degrees.

In the meantime:
In a large pot, heat the oil and fry the onion till golden, add the chicken parts after spicing them with salt and pepper.
Fry them a bit from all sides and add the red pepper stripes, the mushrooms and the potatoes. Spice with all the rest of the spices and add of course the garlic and tomatoes sauce {the parsley hold for the end}.
Add the water till cover it all and slightly mix with a wooden spoon so the spices, the water and the extra ingredients will meet each other.
Cover the pot and let it cooked on a medium stove fire for an hour.
After an hour, transfer the pot's content to a clay bowl {for those of you who hasn’t one, you can keep going with the cooking pot, just pay attention that it is fit your oven} and keep baking it in the oven.
After 1 hour of cooking in the oven {180 degrees} reduce the temperature to 140 degrees for 2 hours more.
Spray some chopped parsley before serving it.  
Your house was long ago filled with intoxicating aromas from the spices and cinnamon stick.
{As I said before, the longer it will cook in the oven the better the dish will be}.
